Dinner idea: Baguette Bruschetta
3-4 small tomatoes, sliced (1⁄4 inch thick)
5-6 leaves fresh basil, chopped, or 1 teaspoon dried
12 slices mozzarella cheese
12 thin slices red onion
2 teaspoons Balsamic or red wine vinegar
4 tablespoons olive oil
2 cloves garlic, minced
Dash salt and pepper
12 slices French baguette bread
Whisk vinegar, olive oil, garlic and salt and pepper, and brush on bread. Place on each a cheese slice, onion, tomato and then a basil garnish. Dribble remaining dressing over all. Broil on high until cheese melts, about 6 minutes. Serve hot or cold. Note: For bruschetta mini-pizzas, brush bread with pizza sauce and add toppings of your choice.
